A gin like no other

Cantarelle Gin de Provence Exclusive Amphora Aged is an outstanding gin, aged and produced in very limited quantities.

Made with the same recipe as Cantarelle Gin de Provence, the gin is aged for at least six months in terracotta and clay amphoras coming from the best craftmen in Italy. This ageing results in an incredibly smooth texture and powerful aromas.

Why is the ageing done in amphoras ?

Since the Roman times, the ageing in traditionnal terracotta and clay amphoras is known to improve the wine making process and the ageing.

Pascal Debon and Olivier Blanc, the master distiller, decided to age our Gin de Provence in amphoras coming from one of the most famous craftmen in Italy.

So, the aromas are combined with each other, the gin is smooth and harmonized with an exceptionnal aromatic complexity.

TASTING

This exceptionnal gin can be enjoyed dry or on the rocks, the best way to extract all its aromas and complexity. Also, the simple addition of tonic makes it a great cocktail.

Colour

The ageing in amphoras does not change the initial colour of the gin, it stays white enamel, pure and transparent.

Notes

Floral notes of limetree flowers and teas, elegant veil of grapefruit, fine and long nose, with hints of bitter orange.

Palate

Supple, balanced, with a smooth texture. The plants and fruits are perfectly harmonized. An amazing lingering finish and surprising openess on the palate.

RECIPE

Alcohol

The basis of Cantarelle Gin de Provence Exclusive Amphora Aged is a wine alcohol obtained from the distillation of Provence grapes.

Aromas

Cantarelle Gin de Provence Exclusive Amphora Aged is made from 100% natural ingredients, botanicals, and fresh fruits.

A subtle mix of juniper berries, lime tree flowers, grapefruit, bitter orange peels and coriander

Degree of alcohol

43% alc./vol.

ELABORATION

Macerations

The botanicals, as well as the fruits, once cut, are put in big maceration bags, then infused in a mix of wine alcohol obtained from Provence grapes and pure water. This stage lasts 15 days and permits to extract the aromas.

The distillation

The macerate is obtained once the maceration bags containing the ingredients have been removed. It is distillated in the Charentais pot still of the Distillery of Cantarelle, similar to those used for cognacs.

An essential step, the distillation is realised under the watchful eyes of the master distiller, Olivier Blanc, who has been an expert in exceptionnal spirits for decades.

The reduction

Lastly, pure water is slowly added to the distillate obtained to reduce the degree of alcohol to 43%. alc./vol.

The ageing

Then, the gin is poured in clay and terracotta amphoras, located in the distillery. The gin ages in amphoras for at least six months.

It is regularly tasted in order to determine the best moment for it to be bottled.
